調べ直したら認識全然違ってたわ
梅酒を作る上で必要な基準が

・既に酒税が払われた20度以上の酒で作ること
・糖類、梅等の混和を許可(穀物やぶどう、麹は不可)
・アルコール分1%以上の発酵が無いもの

以上の条件を満たせば酒税法に引っ掛からないらしい
