人長：そして麺を茹でる工程があるので、フライパンをふたつ用意しております。そもそも酸辣湯麺って「酸っぱくて辛い麺」ですよね。酸味はお酢ですが、実は辛味はラー油の辛さじゃなくてホワイトペッパー、胡椒の辛味なんです。

──「辣（ラー）」とは言いつつ唐辛子ではない、と。

人長：そうなんです。胡椒とお酢のラーメン、それが酸辣湯麺。どうしても辛味ってラー油の辛さだと思われがちなんですけど、中国では胡椒と唐辛子を辛味としてしっかり使い分けてるんです。だから、両方「辣」です。単純に「辛い」って意味なんですよね。

仮にアメリカでペースト状の玉蜀黍と塩で作ったスープを味噌汁呼んでたらやっぱり別の名前にしなよ、と思うよね
