　帰国後、27歳から銀座の寿司店で修業しますが、当時は年収300万円。苦労が多かったといいます。修業時代は、客前で寿司を握ることができず、閉店後に一人練習に明け暮れる日々。

　田中さん：「日本でこのまま続けても、芽を出すにはちょっと条件が厳しい。それが海外だったら、もうちょっと芽が出やすいのかなって」

　そこで当時、兄弟子が働いていたニューヨークの寿司店で働くことを決意。アメリカに渡ると、すぐカウンターで寿司を握れるようになり、年収は修業時代の倍の600万円になりました。

　田中さん：「海外だったら、フラットな目で見られますし、プラス、スキルを生かしやすい」

　5年間働き、ためた資金でおととし、マイアミに念願の寿司店をオープンさせたのです。
