高級寿司店は無駄にプライド高いから最近になって流行りだしたサーモンを出したがらない
寿司人気ランキング1位なのにバカな集団やでほんま

これ、サーモン置かない寿司屋とかマジで不快な存在
そのうち若者の寿司離れとかニュースになりそうやな
ノルウェーの人が地道にサーモンの良さを説得したおかげで置く店も増えたって聞いてるが
そら置くところは置くよ
養殖はわりと新しめの技術なんで伝統的な所ではスタイルに合わんやろな
そういうところが老害思考ってことやろ
伝統ばかり気にして客が求めてるものに応えれない
そもそも江戸前寿司を楽しむために行くんやから伝統にこだわっててもええんちゃうか？
別に誰も江戸前寿司とはいってなくて草
サーモンを出さない寿司屋は江戸前寿司位やろ
前衛的なとこやと肉とかキャビアとかファアグラの寿司もあるんやろうけど、
これは江戸前寿司といってええんかな

冷凍が不完全だと復活することもあるそうな
多角経営や
サーモンも50年とかしたら回らない寿司でも定番になるんかもな
脂分がきつくてあんまり好きじゃないんやが

その辺の店ならある程度の旨さでいいけど高級店なら店のメンツもあるし下手なもんだせんのやろな
びっくり寿司、まいもん寿司、すしざんまい→普通の寿司を食べに行くところ
個人経営の鮨屋→旨い寿司を食いに行くところ
大体こんな感じやろ
田舎やし近場にチェーンの寿司屋あらへんから個人店1択になってまうわ
簡単なものほど技術と素材重視で誤魔化しがきかんからやない？
刺身、すし、天ぷら、鰻とか作ろうと思えば作れるけど
材料同じでも絶対越えられない壁がある感じ
